Meatless Monday: Caramelized Onion and White Bean Flatbread

Flatbread pizza takes on a vegetarian flavor perfect for these warm Summer evenings :)

Ingredients:
3 tablespoons extra virgin olive oil
1 large onion (thinly sliced length wise)
1/4 tablespoon salt
20 ounces prepared whole-wheat pizza dough (thawed if frozen)
2 tablespoons minced fresh oregano (or 2 teaspoons dried)
1/2 teaspoon freshly ground pepper
1 15-oz. can white beans (rinsed)
3 tablespoons water
2 teaspoons white-wine vinegar
2 plum tomatoes (thinly sliced)
1 cup finely shredded smoked Gouda (or Cheddar cheese)
